Last Days of Summer...

With end of summer  approaching I realized I had not relaxed by my pool once this entire season.  Since moving into our home, I had renovated it , decorated it ( still doing) gotten married in it, but not much mossing in it.

Although I am type A, a somewhat neurotic New Yorker at heart, I still like to have that day, every now and again to decompress.   I needed to get my tush in one of those lounge cushions.  After all I had spent all that time choosing the fabric , driving down to L.A. to have them made, getting them extra thick and comfy, wasn't I suppose to enjoy them? 

We had one somewhat free day, I invited my boys over (globallygorgeous.com)  otherwise known as John & Gregg, and made a simple lunch.

I bought all the latest home decor and fashion mags, and we lounged, ate, swam, and talked real estate. A perfect day!   I highly recommend taking this time every once in a blue moon. We all need it!

Speaking of moon, did you see it the other night.... spectacular!!

Lunch by the pool Menu:

Pitcher of Arnold Palmers .... fresh brewed ice tea and homemade lemonade, I made the night before.

Chicken Salad with avocado

Mixed baby greens

Cantaloupe

Heirloom tomatoes ( from our garden ) and Burrata, with fresh Basil ( also from garden ), drizzled with olive oil and sprinkled with salt.

Chicken Salad Recipe:

3 Chcken Breasts ( boneless  skinless )

Kosher salt & freshly ground pepper

1 Tablespoon ( give or take ) fresh minced tarragon leaves

Approximately 1/4 cup of mayonnaise

1 Tablespoon mustard

 1 tablespoon minced fresh chives

1/2 red onion chopped

about 3 celery stalks chopped

1/2  to 1 lemon.

1 avocado

Season chicken with salt & pepper , then poach. Refrigerate when done.

In a bowl mix all the other ingredients, squeeze lemon juice in and mix. chop up chicken and add to bowl. add salt and pepper to taste.

Place in a pretty serving dish and put sliced avocado around it... Serve... Eat
